Purple Eggs?? How?!!?
No chicken lays true purple eggs, but some breeds produce eggs with a purple or lavender tint due to a natural protective coating called the bloom, or cuticle, which coats the eggshell and can reflect light in a way that makes the egg look lavender, plum, or even purple. Once the egg is washed, this bloom is removed, revealing the actual eggshell color, which is usually brown, cream, or tan.
The bloom also serves to protect the egg from bacteria and helps maintain freshness - which is why we sell our eggs unwashed.
Purple eggs are rare for our flock, so not every dozen will include one.
Haigh’s Eggs are for sale at our roadside stand for $5 per dozen and are first come, first served.
